I enjoy a glass of avocado milkshake (blend avocado pulp, fresh milk and honey) from time to time. Now, with three rippen (and expensive) avocados in my fridge that must be eaten very quickly, I cannot imagine drowning myself with three glasses of milkshake so soon! A frantic search for avocado recipes turns up this recipe that comprises ingredients already available in my pantry. I reproduce the ingredients and steps below:

300g wheatmeal biscuits
500g cream cheese (at room temperature)
200g caster sugar

1 tbsp cornflour
3 eggs
2 tbsp lemon juice
2 cups avocado (pulped) - about 100g
Steps>>
1. Preheat oven to 180°C.
2. Line the baking tin with baking sheet.
3. Crush the biscuits with a rolling pin and stir in the melted butter.
4. Press the crumb mixture into the base of the tin with a spoon.
5. Beat the cream cheese and sugar until smooth.
6. Beat in the cornflour and then add the eggs, one at a time, beating until smooth.
7. Add the lemon juice and the avocado and beat briefly to combine.
8. Pour the batter into the tin and stand the tin in a large baking dish.
9. Pour boiling water into the dish to come halfway up the sides of the tin.
10. Bake for 50 minutes, then turn off the oven but do not open the door for a further hour.
11. Lift the tin from the water bath.
12. Cool completely in the tin and refrigerate for several hours or overnight before serving.
