Banana Cake

I have made this cake 3 times. Love the soft crumbs :)

Recycle your waste: Egg Shells, Banana Peels and Coffee Grounds

Don't throw these (banana peels, egg shells and used coffee grounds) away. They can be turned into fertilizer for plants. Dry the peels in the oven. Add equal parts of grind egg shells and peels to the soil. The same for dry coffee grounds.

Hainanese Loaf



Finally found this recipe in "Skillful & Creative Treats" by Chef Lim Siew Chung. Best eaten warm with kaya and hot kopi :D

Ingredients
500g high protein flour
1 tbsp milk
30g castor sugar
1/2 tsp salt
1 tbsp instant dry yeast
300-320 ml water
40g butter

Chinese Steamed Buns

Made these on CNY eve for breakfast the next morning. Can't remember where I obtained this recipe, but this works every time.

Ingredients
500g flour (or pau flour)
1/2 tsp baking powder
1/2 tsp salt
1 tbsp sugar
2 tbsp vegetable oil
250 ml lukewarm water
1 tsp instant yeast

Steps
1. Mix all ingredients and add water
2. Knead till it is smooth and does not stick to hands
3. Rest till double in size
4. Punch down the dough and shape into balls. Add filings (if desired)
5. Place on a small piece of paper and let them rest for 30 mins.
6. Steam for 10 mins
