Japanese Cotton Soft Cheese Cake & Tau Suan



Recently, I made two of my favourite treats.

The Japanese Cotton Soft Cheese Cake is not a new "project". I have made it a few times and shared with my family and colleagues. Good feedback were received.

I have not eaten Tau Suan for many years until a colleague mentioned that it is very easy to prepare. True enough, the ingredients are easily available and the steps are simple. This is my second attempt. It looks great and tasted heavenly with Chinese cruller.

Broccoli Quiche



This is a broccoli quiche that I baked
for lunch today. Easy and simple to bake and I make it healthy too. A possible packed lunch idea? Here are my ingredients that serves two:

Crust (from All Recipes)
95g plain flour
2g sugar
3g salt
50ml sunflower oil
15ml milk

Fillings
300g broccoli
2 slices of ham
Dash of salt & pepper
1 tbsp olive oil
2 egg whites
1 egg yolk
10g Parmesan cheese
30ml milk

[1] Mix and knead crust ingredients. Flatten into pie pan, poke holes and bake for 15 minutes at 200 degrees.
[2] Saute broccoli and ham with olive oil. Mix eggs, milk and cheese in a bowl.
[3] Spoon cooked broccoli into crust and pour egg mixture over evenly.
[4] Bake for 35 minutes at 175 degrees.

Mini Vegetable Pies


I made eight mini vegetable pies last evening. Two were for supper and six were left in the fridge unbaked. I had them for breakfast this morning and accordingly, these is no obvious change in taste and texture after being the fridge overnight. For the dough, I reduce the butter and the yogurt so that it is firmer and healthier too!

Vegetable Pie


I baked a gigantic vegetable pie today based on the recipe in My Culinary Journal (minus the chicken breast) The fillings was delicious but unfortunately, my pie crust was too thick and lacked crisp.
