Banana Walnut Loaf II

Another attempt at making this quickbread. I think I'm more successful this time, at least there were no air pockets. The texture is almost cake-like.

Whenever we purchase bananas, I cannot resist making something out of it. This time, its a quickbread with recipe (reduced sugar version) from Happy Home Baking.

Banana Oat Quickbread

I repeated the recipe for blackberry bread today replacing blackberry spread with 2 ripe bananas and 3 tablespoons for quick-cooking oats. Yum, I could smell and taste the bananas!

Blackberry Bread

I received a free bottle of organic blackberry jam spread and thought it would be nice to use in the banana blueberry bread recipe found in Happy Home Baking. I substituted fresh blue berries and mashed bananas with two tablespoons of blackberry jam. The white spots on the bread was due to my failure to stir in the jam properly. Verdict: moist and not too sweet.
