Ultimate Vanilla Ice Cream


This is a recipe from BBC Good Food.

I made this ice cream without using the ice cream machine and it took half a day to be ready -- I whisked after every 45 minutes of freezing until the custard is thick and hard to stir. Then I froze it for another 2 hours before serving. The end result is rewarding!

Baked Rice



This is a very easy baked rice receipe. I made this twice and each time its ready in 45 minutes.

1) Stir-fry your uncooked rice in olive oil/unsalted butter, cloves of garlic and season with salt and pepper. Once, it is fragrance, add water to cook the rice.
2) Let the cooked rice cool and stir-in the ingredients - I have added cubes of pineapple and ham.
3) Transfer the mixture into a bakeware, spread some spoonful of Campbell's mushroom soup concentrate, and sprinkle the top with your favourite cheese.
4) Bake for about 30 minutes at 250 degrees or until golden brown.

Katherine Hepburn Brownies


This is not your typical brownies.
As you can see, the crust is crispy and the inside is extremely moist.
Do remember to reduce the sugar if you are using sweetened chocolate.

Japanese Cotton Soft Cheese Cake & Tau Suan



Recently, I made two of my favourite treats.

The Japanese Cotton Soft Cheese Cake is not a new "project". I have made it a few times and shared with my family and colleagues. Good feedback were received.

I have not eaten Tau Suan for many years until a colleague mentioned that it is very easy to prepare. True enough, the ingredients are easily available and the steps are simple. This is my second attempt. It looks great and tasted heavenly with Chinese cruller.

Baked avocado cheesecake





I enjoy a glass of avocado milkshake (blend avocado pulp, fresh milk and honey) from time to time. Now, with three rippen (and expensive) avocados in my fridge that must be eaten very quickly, I cannot imagine drowning myself with three glasses of milkshake so soon! A frantic search for avocado recipes turns up this recipe that comprises ingredients already available in my pantry. I reproduce the ingredients and steps below:

Ingredients>>
100g butter (melted)
300g wheatmeal biscuits
500g cream cheese (at room temperature)
200g caster sugar

1 tbsp cornflour
3 eggs
2 tbsp lemon juice
2 cups avocado (pulped) - about 100g

Steps>>
1. Preheat oven to 180°C.
2. Line the baking tin with baking sheet.
3. Crush the biscuits with a rolling pin and stir in the melted butter.
4. Press the crumb mixture into the base of the tin with a spoon.
5. Beat the cream cheese and sugar until smooth.
6. Beat in the cornflour and then add the eggs, one at a time, beating until smooth.
7. Add the lemon juice and the avocado and beat briefly to combine.
8. Pour the batter into the tin and stand the tin in a large baking dish.
9. Pour boiling water into the dish to come halfway up the sides of the tin.
10. Bake for 50 minutes, then turn off the oven but do not open the door for a further hour.
11. Lift the tin from the water bath.
12. Cool completely in the tin and refrigerate for several hours or overnight before serving.

Buttermilk Walnut Banana Cake

If you enjoy banana cake that has fine texture, dense and moist. Here's a recipe from Exclusively Food for you.

Ingredients:
125g butter, softened
280g very ripe, mashed banana
1/2 teaspoon vanilla extract
2 large eggs
100ml buttermilk (turn milk into buttermilk)
225g self-raising flour (turn plain flour into self-raising flour)
1/2 teaspoon bicarbonate of soda
330g sugar

Method:
[1] Blend wet ingredients. Add buttermilk last.
[2] Add the dry ingredient (sieve flour and soda) and blend.
[3] Mix in some crushed walnut nuts.
[4] Pour batter into pan and bake for about 60 minutes at 160 degree.

Lemon Yogurt Cake


A soft and moist lemon yoghurt cake recipe improvised from All Recipes:

Ingredients:
110 vegetable oil
120 castor sugar
2 eggs
1 tbsp of fresh lemon zest
140g plain flour
1g baking soda
2g salt
150g plain Magnolia low-fat yogurt


Method:
1) Cream oil, sugar and lemon zest and beat in the eggs till combined.
2) Sieve flour, baking soda and salt.
3) Divide flour and yogurt into 3 portions and fold them in alternate.
4) Bake at 165 degrees for 60 minutes.
5) Cool and serve

Chocolate Cream Cheese Cake





This yummy yummy cake recipe come from Happy Home Baking.

Ingredients:

Cream Cheese Mixture>>
  • 250g cream cheese (soften at room temperature)

  • 60g castor sugar

  • 1 egg

Chocolate Mixture>>

  • 180g butter

  • 150g caster sugar

  • 3 eggs

  • 3 tablespoon cocoa powder

  • 120g self-raising flour

  • 1 tablespoon baking powder

Method:

1) Preheat oven at 150°C.

2) Cream Cheese Mixture - beat cream cheese with sugar until light and fluffy. Add in the egg gradually and beat until well incorporated. Set mixture aside.

3) Chocolate Mixture - Beat butter and sugar until light and fluffy. Beat in eggs, one at a time until well incorporated into mixture.

4) Sieve all the dried ingredients together. Fold into the egg mixture.

5) Pour half of the chocolate mixture into the cake pan.

6) Pour all the cream cheese mixture and then the remaining chocolate mixture.

7) Gently spread the chocolate mixture to cover all the cream cheese mixture.

8) Bake for 45-50 min or until skewer comes out clean.

I bought two boxes of fresh blueberries at a discount and turned them into blueberry muffins and blueberry pancakes. I don't really enjoy muffins ... but the pancakes were grrreat! When the blueberries ran out, I substituted them with bananas and they were even better.

Simple Homemade Pizza




Dinner is ready in 30 minutes!

A - Roll out the dough

B - Add your favorite toppings together with tomato sauce and cheese.

C - Bake at 175 degree for 20 minutes

**Pizza dough and tomatos sauce can be prepared days in advance. **


Pizza Dough (from All Recipes)
200 ml warm water
7 g instant yeast
275 g bread flour
30 ml olive oil
6 g salt
8 g sugar

1) Add instant yeast to warm water. Rest for 10 minutes / turns foggy.

2) Combine flour, salt & sugar. Make a well in the flour and add in oil and yeast mixture.

3) Mix well and knead into a dough (takes 5-10 minutes).

4) Rest the dough under the cling wrap till it becomes double in size (takes 45-60 mins).

5) Roll out to the desired size.



Pizza Sauce (from MyWokLife)
1 can tomato puree (411g)
1 tbsp chopped onion
1 tbsp sugar
1/4 tsp salt
1/2 tsp Italian mixed herbs
1 tbsp butter
Blackpepper to taste


1) Sautee onion in butter

2) Stir in tomato and season with sugar, salt, mixed herbs pepper.

3) Simmer for 20 minutes. Cool and store.
